Foods and You Welcomes Special Guest Chef
Rich Jones
On Thursday, January 10, 2018, Mrs. Orange’s Foods and You class was honored with a special guest chef. Rich Jones from Pittsburgh Technical Institute demonstrated how to properly prepare a meal, as well as promote Pittsburgh Technical Institute. He is an ambassador for P.T.I., and he travels to different schools everyday to provide a demo and a short presentation with brochures about P.T.I.
Pittsburgh Technical Institute is a college located just west of Pittsburgh. P.T.I. offers over 40 different curriculums. Chef Jones presented a Power Point that included information about both the soup he made and P.T.I. The slideshow contained some courses from the college and highlighted all of the culinary arts programs and features.
All of the students enjoyed Chef Rich and his soup. He had quite the sense of humor and found a way to teach us through laughter. Chef Jones has been to Redbank before. He came a few years ago to do a demonstration for the class. Chef Jones made us Sopa de Lima – Lime Soup. The recipe is below.
1 Tablespoon vegetable oil
1 cup chopped onion
2 garlic cloves, minced
3 cups chicken stock
1 – 1/2 cups Roma tomatoes (peeled, seeded, inch dice) or canned, petite-diced tomatoes.
1 – 1/2 cups corn kernels
2 Jalapeno chilies, seeded and minced (or cayenne pepper, to taste)
1 teaspoon ground cumin
1 cup chicken thigh meat, fat trimmed, and thinly sliced
3 tablespoons cilantro, chopped
1 – 1/2 tablespoons fresh lime juice
Salt and pepper, to taste.
